The French Coastline with Alison Maher, the French Food Coach
Imagine meandering along the French coast, picking up some fresh cheeses, and then selecting just–caught fish from the local poissonnerie (fish shop). A little further on there’s a patisserie, where, of course, we pop a few things into our basket…

Our Menu:
French cheese platter
Two types of white fish, one with a beurre blanc sauce with turned vegetables, the other with a leek coulis with saffron and dill
French fruit tart with creme patisserie


What to expect:
Settle in over a cheese platter and glass of wine. Then, Alison will demonstrate how to debone and fillet fish, which you’ll then cook along with two types of sauces. Next, you’ll be ‘turning’ vegetables, a French technique. To finish, you’ll make a classic French tart, and discover the secrets behind a perfect creme patisserie and the art of glazing. This delicious feast is then yours to enjoy, along with an optional glass or two of matching French wines. Sound like you? Let’s get cooking!

Come and enjoy a refined French high tea experience, which includes making, cooking and eating a variety of delicious savoury and sweet French canapes — and, of course, a glass of Champagne or cup of tea.

We’ll be making French pastries (petits fours) and sandwiches. These may include honey madeleines dipped in chocolate, Chantilly choux puffs, shortbread, petite baguettes with smoked salmon, savoury and sweet tarts, biscuits and vanilla raspberry slices.

A Gluten–Free Feast with Leila Knowles
Come along and learn how to create a delicious, gluten-free menu that even the most-hardened of bread lovers will adore. We’ll start with two moreish vegetarian dips, followed by the most fabulous and fragrant cauliflower rice topped with succulent salmon. For dessert, you’ll whip up a luscious cake made with almond meal and iced with yoghurt and fresh figs.

Lunch in Normandy with Alison Maher, the French Food Coach
Spring is here and to celebrate we are going to Normandy on the French coast, as it’s an area famous for seafood, cider, apples, calvados and, of course, cheese.
Le Menu:
Baked Camembert with Garlic and Rosemary
Mussels in Cider with Creme Fraiche and Crusty Baguette
Normandy Crepes with Calvados Caramelised Apples


What to expect:
On arrival we will bake the camembert, which is very quick, and oh so delicious, especially with a glass of crisp French white wine. Next, we’ll prepare the mussels and cook them in a delicious base of herbs, cider and a touch of creme fraiche. For dessert, you’ll learn the art of cooking thin delectable crepes. Test your skills with a frying pan by flipping the crepes! Learn to caramelise the apples with Normandy’s famous calvados (it tastes of apples). Let’s get cooking!

Come and enjoy a refined French high tea experience! Over two hours you will enjoy the art of making a variety of delicious savoury and sweet French canapes. As it’s high tea, a glass of Champagne or a cup of tea is a must. Have a relaxing afternoon indulging in all these delicious French treats.

A Spring Feast with Leila Knowles
Join Leila in the Williams Sonoma kitchen as she shows how to cook a spring-inspired menu. Think divine watercress soup, spring lamb and a classic lemon delicious. A perfect lunch menu to share with friends as the weather warms up.

Menu
Entree: Watercress soup with labneh and spiced oil.
Main course: Roasted boneless leg of lamb with asparagus, pecorino and lemon risotto served with zucchini flowers. Mixed green leaf salad.
Dessert: Lemon delicious with homemade vanilla ice cream and fresh raspberries.

Brunch — French style
This Sunday brunch will turn a good weekend into a great one. Learn the techniques required to make perfect French omelettes — and present them with flair. You will then cook a sweet dish, which may be crepes with caramelised apples or pain perdu (French toast). Swap your coffee for a glass of champagne and enjoy your meal with lots of crusty baguettes to add to the French-style brunch.
