This recipe calls for a strawberry purée, and although it can be store-bought, making it homemade takes seconds and produces a more flavourful result. In a high-powered blender, add a handful of strawberries and blend until puréed. Strain through a fine-mesh sieve set over a small bowl. Use immediately or keep covered in the refrigerator for up to 1 day.
INGREDIENTS:
- 1 oz. (30 ml) Williams Sonoma Elderflower Syrup
- 1/2 oz. (15 ml) fresh strawberry purée
- 1/4 oz. lemon juice
- 3 oz. (80 ml) sparkling water
- 3 oz. (80 ml) sparkling wine
- 1 strawberry with hull intact, sliced lengthwise, for garnish
- Fresh basil leaves and fresh mint sprigs for garnish
Directions:
- Fill a spritz or coupe glass halfway with ice.
- In a mixing glass or cocktail shaker, stir or shake together the elderflower syrup, strawberry purée and lemon juice until combined and well chilled. Strain the mixture into the ice-filled glass and top with the sparkling water and sparkling wine. Garnish with the strawberry, basil leaves and mint sprigs. Serve immediately. Makes 1 drink.
