Elderflower Ginger-Beet Spritz

A wonderful drink to serve Mum on Mother’s Day, this spritz features ingredients that can help to strengthen and heal your digestive and immune systems. We like to use orange bitters for a zesty, spicy flavour. Bottled beetroot juice is sold in most grocery stores; to make your own, peel a raw beetroot and run it through a juicer, or press a steamed beetroot through a fine-mesh sieve.

Ingredients

  • Ice cubes
  • 45 ml beetroot juice
  • 30 ml ginger beer
  • 15 ml fresh lemon juice
  • a dash of orange bitters
  • 3 orange slices
  • 150 ml elderflower tonic water (1 can Fever-Tree elderflower tonic water)

Directions:

  • Fill a wide, tall wine glass with a handful of ice cubes. Add the beetroot juice, ginger beer, lemon juice and orange bitters. Using a bar spoon, stir the mixture until combined. Add 2 of the orange slices, then top the glass with the elderberry tonic water.
  • Cut a small slit in the remaining orange slice and place it on the rim of the glass. Serve immediately. Serves 1.
